Ingredients
300g self raising flour, 125g butter, 150g sugar, 3 eggs, 6 tbsp milk, 1 tsp lemon essence, pinch of salt.
Method
Preheat oven to 160°C. Grease and line a 20cm round cake tin. Beat butter and sugar until light and fluffy. Add lemon essence, then eggs one at a time, beating well after each addition. Fold in sifted dry ingredients, alternating with milk. Pour into prepared tin and bake for approximately 1 hour. |

Classic Cupcakes |

Ingredients
4 tbsp margarine, ½ cup sugar, 2 eggs at room temperature, 2 tbsp milk, 1 ½ cups sifted self-raising flour, pinch of salt, few drops of vanilla essence.
Method
Preheat oven to 180°C and line muffin tins with cupcake cases. On a medium speed, cream margarine and sugar until light and fluffy. Add eggs, one at a time beating well after each addition. Add sifted flour and salt mixture along with vanilla essence until well combined. Fill cupcake containers two-thirds full and bake for approximately 15 mins. |
